2 cups flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1/4 cup butter (room temperature) 1 cup white sugar 2 large eggs 1 teaspoon vanilla extract 1/2 teaspoon lemon zest 1 cup buttermilk 1 cup brown sugar 2 heaping tablespoons ground cinnamon Directions:
Preheat the oven to 350 F. Mix the flour, baking soda, baking powder, and salt in a bowl. Cream the butter and sugar in a separate bowl. In the same bowl, beat in : eggs, salt, vanilla and lemon zest. Take 1/3 of the dry ingredients and combine with the the wet ingredients. Follow this with 1/2 of the buttermilk. Add in another 1/3 of the dry ingredients into the mix followed by the last of the buttermilk. Finally add in the last of the dry ingredients. In a separate bowl, mix the brown sugar and cinnamon. Take a 9 x 5 loaf pan and grease it well. Pour into this 1/3 of the batter. Follow with 1/3 of the cinnamon mixture, alternating the two and finishing with the cinnamon mixture on the top. Bake an hour or until toothpick poked into the bread comes out clean.
You can also add a drizzle of vanilla icing. To make this, combine powdered sugar, whole milk and a dab of vanilla extract. Enjoy!
